Flour less Pancakes {deliciously filling}

This is the most easiest Pancake recipe ever, and according to my husband the most delicious Pancakes I have ever made for him.

Ingredients:

– 2 Mashed Bananas

– 2 Eggs

– 1 Egg white

– 1/2 cup Plain Greek Yogurt

– 1/4 cup Organic Peanut Butter (can always add more)

– 1/2 cup Almond Flour

– 1/4 tsp Cinnamon

– Coconut Oil for Skillet

Syrup:

– Frozen Berries (any will taste good)

– Raw Honey

– Juice of 1/2 a Lemon

Whisk all the Ingredient together to make the Pancake Batter.

Add Coconut Oil to a medium Skillet and add as much batter as liked for each Pancake, depending on the Pancake size preferred.

While working on the Pancakes, add the Frozen Berries in a small Cooking Pan turn the heat to medium. Add Honey, Lemon juice and a bit of Water to the Berries, and let it cook for about 5-10 min.

Stack the Pancakes with a tsp of Greek Yogurt on top (Optional) and pour the syrup over.

Voila!

 

Pumpkin Pie {Birthday& Thanksgiving}

My lovely husband turned 20 last Saturday, and  because he love the Pumpkin Pie I made for thanksgiving so much, I decided to surprise him with the same pie on his Birthday. We got snowed/ iced in over the weekend, so we were stuck at my Dad’s place for 3 days. Thankfully my Dad and I decided to get all the groceries we needed for my husbands birthday, the day before the crazy weather.

Anyways…back to that Pumpkin Pie, I never made a Pumpkin Pie before and was very nervous to make one for thanksgiving. I was  determined to find a good Pumpkin Pie recipe that was simple ,healthy and  also very delicious. So I stumbled across this recipe HERE. And like I always do, I changed a few things….

– For the Crust I substituted the Hazelnuts with Pecans.

– For the filling I substituted the Coconut Milk with 1 cup of Plain Greek Yogurt with only 1 1/2 cup of Pumpkin Pure

– To replace Cornstarch I whisked two Organic Eggs to the filling.

For Lunch I made us Homemade Burgers. My husband has been graving a Burger for quite some time so I decided that it would be a great idea to make homemade Burgers for his Birthday lunch. Which I definitely made sure that the Burgers were healthy ones. I used Organic Ezekiel Burger Buns and made Sweet Potato fries from scratch.

We enjoyed the Snow very much, for my husband was able to stay home with me for 5 days, due to the weather.

My Hairdresser Husband {J’adore}

My Husband has been attending the Toni& Guy Academy in Keller, TX. He is such a great hairdresser already and I know he will do very well once he graduates and starts officially working as a hairdresser. We are planning on moving to England after he finishes school, since we both are very much in tune with our European roots.
I am very picky with who I let cut my hair and when he asked me to do mine I resisted at first, but at the end I let him do his thing, and it came out better than it ever looked before.
Anyways…I am very proud of him, he is the best thing that ever happened to me & the most talented person I know.
