Sweet potato& Sausage, Lentil Stew{Yummy good}

Ingredients:

  • 2 cups of Lentils
  • ¼ large diced Onion
  • 2 all natural Beef Sausages (any type will do)
  • 1 large Sweet Potato
  • 3 Carrots
  • ½ tsp Paprika
  • ½ tsp Cumin
  • ½ tsp Cayenne Pepper
  • Salt& Pepper to taste
  • Water
  • 1 tbsp Olive Oil
  •  Fresh Baby Spinach leaves for garnish

Directions:

– Lentils should be washed thoroughly and soaked in water for about 1 to 2 minutes

– Slice and peal Carrots&  Sweet Potato
– Drizzle Sweet Potato and Carrots with Olive Oil and roast for 30 min. on 380 in the Oven. (Turn over after 15 min.)

– Heat up 1 tbsp of Olive Oil in a nice big Skillet…
– Sauté Onion in the Oil until golden…

– Slice Sausage into ¼ pieces…
– Add the Sausage to the Onion sauté until nicely browned…

– Pour in the Lentils and cover with as much Water as needed…
– Let it cook though until the Lentils are done…

– Cut Carrots and Sweet Potato into cubes…
– Add Carrots& Sweet Potato+ Seasonings to the Lentils…

(I also added 1/2 of a leftover regular Potato, cubed…)

– Mix all the Ingredients nicely together, and the Stew is ready to be served!20130313_133041
