Lunch with Friends{from Switzerland}

My family and I were so excited to have our friends from Switzerland to visit yesterday. They are vacationing in Florida and drove out here to see us:) It was one of the best day’s we have had for a long time, talking about past memories and having them share lots of new news about our beloved Switzerland and our family. Our friends also brought along there 3 precious children ages from 3 to 8, so I knew I would have to prepare a meal kids friendly:) I went through many recipes on the internet to help me come up with a meal, and this is what I came up with…

Honey Mustard Chicken; I using this recipe, but of course changing or adding a few this to my own liking:)

Roasted Carrots and Potato; the recipe I followed calls for Dill, I used fresh Rosemary.

For the kids I baked  All Natural Waffle Cut fries from Costco.

Salad mix to which I added Cucumber and Cherry Tomatoes, with a Lemon Vinaigrette  from Tom Thumb.

For dessert I made my favorite Strawberry Pizza with All Natural Vanilla Greek Yogurt Ice Cream🙂

I made a Whole Wheat& Oat Flour Crust, used Almond Milk, Honey and Olive Oil (I used less Oil than the recipe asks for).

For the filling, I only used 8oz of Cream Cheese(Philadelphia)& 2 Eggs, added a squeeze of Lemon Juice and used Honey for sweetening.

“Mullet Skirt” 2nd time around..

Decided to wear my Inka Mullet Skirt once again, haven’t worn it since the last time… paired it with yet again with a Black Shirt and my favorite Steve Madden Ankle Booties (also worn HERE& HERE), and lots of Jewelry.

Sweet potato& Sausage, Lentil Stew{Yummy good}

Ingredients:

  • 2 cups of Lentils
  • ¼ large diced Onion
  • 2 all natural Beef Sausages (any type will do)
  • 1 large Sweet Potato
  • 3 Carrots
  • ½ tsp Paprika
  • ½ tsp Cumin
  • ½ tsp Cayenne Pepper
  • Salt& Pepper to taste
  • Water
  • 1 tbsp Olive Oil
  •  Fresh Baby Spinach leaves for garnish

Directions:

– Lentils should be washed thoroughly and soaked in water for about 1 to 2 minutes

– Slice and peal Carrots&  Sweet Potato
– Drizzle Sweet Potato and Carrots with Olive Oil and roast for 30 min. on 380 in the Oven. (Turn over after 15 min.)

– Heat up 1 tbsp of Olive Oil in a nice big Skillet…
– Sauté Onion in the Oil until golden…

– Slice Sausage into ¼ pieces…
– Add the Sausage to the Onion sauté until nicely browned…

– Pour in the Lentils and cover with as much Water as needed…
– Let it cook though until the Lentils are done…

– Cut Carrots and Sweet Potato into cubes…
– Add Carrots& Sweet Potato+ Seasonings to the Lentils…

(I also added 1/2 of a leftover regular Potato, cubed…)

– Mix all the Ingredients nicely together, and the Stew is ready to be served!20130313_133041
