Scrambled Eggs {A taste of spring}

This morning I woke up trying to figure out what to cook for breakfast, that is fast and satisfying… And of course anything with eggs never disappoints, so why not make scrambled eggs, with a nice spring twist to it, by adding colorful Vegetables.

Here we go…

5 Eggs

½ Brown Onion peeled and diced

1 Yellow Bell Pepper chopped

2 medium Roman Tomatoes diced

1 cup Fresh Spinach roughly chopped

¼ tsp. Cumin

¼ tsp. Chili Powder

¼ tsp. Ground Ginger

¼ tsp. Black Pepper

¼ tsp. Creole Seasoning

1 tbsp. Parmesan Cheese

1 tbsp Olive Oil

In a large skillet slowly warm Olive oil and add the chopped onion to it. Sauté for about 5 min till the onion is translucent.

Add Yellow Bell Pepper,sauté for about 4 minutes until softened.

Add Tomatoes, sauté for 3 minutes.

Add Spinach sauté for a few more minutes.

Add Eggs, stir till blended.

Stir occasionally, until Eggs are completely set.

Blend in Seasonings

Remove from stove, add Parmesan Cheese.


Served with Whole Wheat Toast with Turkey Bacon, and Orange slices.
